This unusual mix works so well, and is a favourite of a lot of my friends. It was taken from my Ebook, Almost Raw, which is available from the Ebooks section here.
  • 200g Chocolate of your choice.
  • 50g Organic (preferably grass fed) butter
  • 1 tsp Ceylon cinnamon powder
  • 1tsp Vanilla extract
  • 2tbsp Raw honey
  • 100g Organic, gluten free, oat cakes, broken into small pieces
  • 80g Buckwheaties (or similar sugar free cereal)
  • 50g Roughly chopped nuts
  • 175g Pack of fresh raspberries
  • 150g Pack of fresh blueberries
  • White Chocolate topping :
  • 75g/3oz Raw cacao butter
  • 50g/2oz Cashew nuts
  • 1 tsp Xylitol
  1. Line a baking tin with baking paper
  2. Melt the chocolate, butter and honey in a bain marie
  3. Add oatcake bits, nuts, some of the berries and buckwheat's and stir gently to combine
  4. Add in the cinnamon and vanilla
  5. Spoon into the tin, and press down into an even layer
  6. Sprinkle the remaining berries on top
  7. Chill whilst you prepare the white chocolate
  8. White Chocolate to drizzle :
  9. Melt cacao butter until runny over a bain marie
  10. Whizz up cashew nuts in a Nutribullet or similar until they are a fine powder
  11. Do the same with the Xylitol
  12. Add the Xylitol and cashew nuts to the cacao butter and whisk with a hand whisk to combine
  13. Push through a sieve to remove any lumps, to leave a smooth paste
  14. Drizzle the smooth chocolate over the cooled Rocky Road and return to the fridge to harden
  15. Best eaten on the day it's made.
