Such a simple, but attractively presented recipe, can be served as a main corse, with larger portions, a starter, or eaten anytime as a snack. Fun to put together!
  • Vegetables of your choice to chop into matchsticks - i.e. carrots, courgette, pepper, spring onion
  • A whole cucumber, 'shaved' using a vegetable peeler to make long thin strips
  • Spicy Dipping Sauce :
  • Juice of half a lime
  • A garlic clove, chopped
  • 1 Tbsp Coconut oil
  • 1 Tsp- 1 Tbsp of coconut sugar (to your taste)
  • Red chilli - amount to your taste
  1. To make the dipping sauce : whizz all of the above ingredients in a Nutribullet or similar
  2. Chop the vegetables all to the same length
  3. Slice the cucumber into very long thin strips
  4. Take a small bunch of mixed vegetables and wrap up in pieces of cucumber to make a veggie roll
  5. Serve several rolls per person with the dipping sauce in small bowl. Enjoy!
