Amazing, amazing, amazing - these little balls melt in the mouth, you'll definitely need more than one! So easy to make, and taste very similar to their namesake, which is a personal favourite of mine! No nasties in this version though…
  • ¼ Cup coconut oil
  • 4 Tbsp Raw honey (or less if you prefer)
  • 2 Cups of desiccated coconut - and more to sprinkle
  • 2 Tbsp coconut cream
  • 1 Tsp vanilla extract (the real thing)
  • Pinch sea salt
  • Raw Chocolate :
  • ½ Cup coconut oil
  • ½ Raw cacao powder
  • 2 Tbsp Raw honey
  • Pinch sea salt
  1. Method :
  2. Toast the coconut and leave to cool
  3. Melt the coconut oil, and add the raw honey, stir together
  4. Add the vanilla extract, sea salt and coconut to the mixture and stir really well to combine
  5. Using your fingers, roll the mixture into small balls, it's a bit messy and will feel quite oily but that's fine
  6. Place the coconut balls onto a small plate, or tray and place in the freezer to harden.
  7. Raw Chocolate :

  9. Melt the coconut oil, over a bain marie, very gently
  10. Add the raw honey
  11. Remove from the heat and stir in the cacao powder, and sea salt. Whisk with a small hand whisk (non electric)
  12. Take the balls kurt of the freezer, and using a fork dip one by one into the chocolate mixture
  13. Place each individual ball on a cooling tray, with baking paper, or foil underneath to catch the drips, sprinkle each ball with coconut
  14. Continue until all the balls are coated and place the cooling tray in the freezer to harden the chocolate
  15. Enjoy!
